Mizu Sushi in Jackson Hole

Everything about Mizu is surprising, even the fact that it exists in landlocked Jackson. The minimalist decor (backlit, tempered steel walls behind a pressed-bamboo sushi bar) is a far cry from Western kitsch. And then there’s the fish. Flown in from waters around the world, it’s as fresh as any you’ll get at sea level.

All of this can be attributed to owner–executive chef Jarrett Schwartz, who acquired his sushi skills during an apprenticeship at Mikado, a well-known Japanese restaurant in Park City, Utah.
